My husband and I surprised my mom, brothers, and sister. Obviously I couldn’t post before I left, so I waited until goodbyes were said and we returned home. We kept it a secret for 4 months. It was so hard. There were so many phone calls in between that I kept having to try so hard to keep it from her. She and I are very close and share pretty much everything so keeping this from her was very difficult.

My mom’s parents left Abaco and moved to Canada. (In March!!! Crazyyy.) A huge step for them and for me. Almost 3 years ago my mom, dad, sister, and two brothers moved and it was the hardest thing I had ever been through. We always lived around the corner from each other. February made 2 years since I had seen my mom and brother, Tucker. So you can imagine how hard it was to keep a secret.

It was an amazing trip. We got my grandparents settled in to their new place, went to a few great restaurants, had wonderful family time, enjoyed a “mini” honeymoon, and saw the beauty that Collingwood and the Blue Mountains had to offer.

This is my mom’s favorite spot in Collingwood. Right on the beautiful Georgian Bay and it overlooks the town of Blue Mountain.

Stay tuned for more from our amazingly, wonderful trip!

Fish Alfredo

Hey Cravers!

I’m sure you have had Chicken Alfredo or maybe even Shrimp Alfredo, but I have an amazing new recipe for you this week. Alfredo sauce with fish!

My husband and I love pasta and Alfredo sauce is our favorite. One afternoon I let him know that we were having Chicken Alfredo for dinner. It was like a lightbulb came on. He said to me, “Baby, why don’t we try it with fish?” So we did, and it has become a favorite of ours!

We have introduced Fish Alfredo to our friends and family and they have all come to love it as well!

Our favorite fish to use is tuna (in the photo’s above we were given fresh tuna steaks), but we have also used Red Snapper, and Mahi Mahi.

The lemon zest and juice gives it a burst of freshness that you don’t expect from a creamy pasta sauce.

The recipe can be used with any fish of your choice, shrimp, and even chicken. Add in some more spices that you love or some fresh herbs for your own spin on this delicious recipe.

I hope you love this recipe as much as we do! Have a great week!

Sister’s Lunch Date

Well, we made it through the hurricane. We, in Abaco, did not get a lot of wind and rain, but our southern Bahamian islands didn’t fair as well as we did. Please continue to pray for our southern islands as well as the other Caribbean islands.

It has been wayyyy too long since my last post. Since my last post one of my sisters moved to Kelowna, British Columbia; and my other sister went back to Collingwood, Ontario. Before they left we were able to go out for a wonderful sister lunch date at Wally’s.

You’ve read before that Wally’s is my favorite place to eat in Marsh Harbour. The service and food are equally great.

I was so bummed that they didn’t have the ingredients to make my favorite Strawberry Margarita, but Nana, the bartender, told me to try their Mango Margarita. Well, I can tell you it was as amazing as it sounds. I won’t lie to you, I was a little skeptical at first, but wow it was delicious!!

We had their Conch Fritters to start. The ratio of conch and dough is great. I have to say they’re not like my Mama’s conch fritters, but they’re good!

I have told you before that I would share their Cracked Conch with you, but that day I had their Conch Burger. Oh my goodness. Talk about conched out after…yep…sleep time! I was so full, but it was so delicious! Bekah and Carter both had the Fettuccine Alfredo and loved it.

Sooooo yum!!!

It was truly an amazing day with my favorite sisters. (They’re my only sisters so that’s why they’re my favorite.) I can’t wait for next summer when the three of us are reunited!

*Wally’s is now closed for the season and will reopen in November.*

Hurricane Irma

Hey cravers!

I wanted to reach out to you before Hurricane Irma is upon us. We in Abaco are preparing for her arrival, but are praying she stays away.

Please keep the entire Bahamas, Barbuda, Puerto Rico, other Caribbean islands, and Florida in your prayers.

My brother and sister left last weekend and are safe in Canada. This week you guys were supposed to have a new recipe, but unfortunately I have been crazy busy trying to get prepared.

Next week once I am back online I will have organizing ideas, some pictures of cakes I’ve made in my off time, and some hurricane tips. Please stay tuned for them.

If Hurricane Irma is coming your way; I beg you to be prepared. If you are in an evacuation zone, get out!!!

We have already started to feel wind and are expecting more this afternoon and into the weekend.

Please stay safe!

Love and prayers to you all!

The wind has picked up, and most boats are out of the harbour or in a marina. Please pray for everyone in Irma’s path.

Chicken with Rosemary Mushroom Cream Sauce

Hey cravers!

Sorry I have been MIA for a while. My brother and sister came from Canada to visit for a month so I have been spending a lot of time with them. (Also, my Roomba ate my computer charger and I’ve been borrowing my dads when I can.)

I have been trying a few different recipes, but also want to share some of my favorites with you.

I don’t know about you, but I LOVE mushrooms. This is a fantastic recipe, with chicken and mushrooms, for you to try. My husband isn’t a big mushroom lover, but he loves when I make this for dinner. The flavors come together so well that you’ll be wanting more.

This Bertolli Extra Virgin Olive Oil has become my new favorite. Olive oils are not cheap in Abaco so getting a really flavorful one will cost you. I like this EVOO because it gives good flavor and isn’t too over powering.

After adding garlic and broth, or wine. You’ll want the liquid to be to this point before adding more broth.

Rosemary Cream Sauce

After adding Worcestershire Sauce, A1 Sauce, and spices.

I hope you all enjoy this recipe as much as we do! I can’t wait to share more with you.

Mango Daiquiri Weekend

Hey Cravers!

Today, July 10th, is Bahamian Independence Day! Happy Independence Bahamas!!! So Friday, I thought I’d start the weekend off relaxing and the perfect way to do that was with homemade Mango Daiquiris!

Every summer, which in the Bahamas is the season for mangos, my dad would make Mango Daiquiris for all of us to enjoy on the porch after work.

Since this weekend is a holiday weekend I took some time to relax. I took time to notice things in my yard; the beautiful bougainvillea, two hummingbirds, the sun setting, and the cool breeze. It was a wonderful way to wind down my Saturday.

My beautiful bougainvillea.

Even Lily enjoyed the breeze!

Sunday I had mangos delivered to me, so another daiquiri day it was! It really is a great recipe. The rum isn’t too strong, which I like, but if you want more, then add more! That’s what’s good about recipes you have the basic ingredients, but you can make it yours! Figure out how much rum you like, if you like it a little icier, or if you like it thinner then add more pineapple juice. Make sure and write down your changes so you don’t forget when you get it perfect for you!

How delicious does that look?!

Today, Monday, more mangos were delivered and more daiquiris it is! Total day of relaxation!

Enjoy with friends and family! That’s when daiquiris taste the best!

I hope everyone had a great weekend!

Wally’s Restaurant & Boutique

Hey guys!

Wally’s has always been a favorite place of mine. When Wally owned the restaurant his daughters Maureen and Barbara managed it. My grandmother and I would go there for Saturday lunch dates. I always remember Barbara wrapping up my leftovers in tinfoil shaped like a swan, and no lunch was ever complete without a brownie fudge sundae!

To this day I love eating at Wally’s. When you live on a small island you often know everyone. However, the ladies at Wally’s always make you feel welcome no matter if you’re a tourist or a local. My husband and I are usually there once or twice a week so you’ll see a lot of food posts from there!

One of their top menu items is Cracked Conch, definitely a favorite of mine! I have heard there is another restaurant on the island, that I haven’t checked out yet, also known for their cracked conch, but that’s a different craventure.

You should definitely try their daily specials. Here’s one from last week:

Fried Snapper

One of my lunch favorites is their Ahi Tuna, it’s a grilled tuna steak with grilled veggies and a salad on the side. Oh, and you have to try Wally’s house dressing, the Mango Vinaigrette, is so delicious! They also serve something you wouldn’t expect with their tuna, Teriyaki sauce. I know, it’s different, but it works well with the fish and really makes the dish.

Seared Tuna

Don’t forget to try Wally’s drinks specials! Their house sangrias are both delicious, but my favorite drink for lunch is their strawberry margarita! And before you leave you should take a look inside the boutique. They always have cute dresses, swimsuit covers, and fun earrings for sale.
